Its meaning is similar to Michelin-starred, three hats are the highest honor, and Momofuku Seiobo is one of the two hat restaurants selected in 2017.
Momofuku Seiobo is the first Baifu restaurant outside New York, and the well-known pork buns are no longer on sale. But Paul Carmichael, the new executive chef, combines his traditional Barbedo, an independent island state on the Caribbean and Atlantic borders, with Australian cuisine, a striking mix. For a full experience of this brand-new style of Fusion cuisine, diners can choose a 16-course tasting menu (either alcoholic or non-alcoholic). Compared with other high-end restaurants, where the latest cool music is played, diners don't have to sit tight. They can easily sit around the kitchen table, and the overall atmosphere is relaxed and comfortable.
