Rising orders, on the one hand, and drought in the past 12 months, on the other, have contributed to the current supply crunch.

Cambinata exports about 40 tons of agricultural products to Asian and out-of-state markets each year and supplies high-end restaurants. Their products have been widely praised.

"crayfish demand has grown dramatically over the past decade, especially during the peak tourist season, when restaurant diners consume as much as 60 kilograms a week," Colin Addison said.
